- 2 cups peeled and diced apples (about 2 medium apples)
- 2 tbsp granulated sugar
- 1 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp lemon juice
- 1 tbsp cornstarch
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
- Coarse sugar for sprinkling (optional)
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined.
- Unroll pie crusts and cut out circles using a 4-inch round cutter.
- Spoon a small amount of apple mixture into the center of each dough circle.
- Fold dough over the filling to form a half-moon shape. Press edges with a fork to seal.
- In a small bowl, whisk together egg and milk to make egg wash. Brush over each pie.
- Sprinkle with coarse sugar if desired.
- Cut a small slit on top of each pie to allow steam to escape.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
Notes
- You can use store-bought or homemade pie dough.
- Try adding a pinch of cloves or allspice for extra flavor.
- Serve warm with ice cream for a delicious dessert.
