- 2 cups cooked chicken breast or thighs, shredded or sliced
- 3 cups Napa cabbage or romaine lettuce, chopped
- 1 cup carrots, julienned
- 2 green onions, sliced
- 2 tbsp fresh cilantro or parsley, chopped
- 1/4 cup sliced almonds
- 2 tbsp soy sauce or tamari
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 garlic clove, minced
- 1 tsp fresh ginger, grated
- Salt, to taste
- Black pepper, to taste
- In a large bowl, combine the cabbage, carrots, green onions, cilantro, and chicken.
- In a separate small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, salt, and pepper.
- Pour the dressing over the salad and toss until evenly coated.
