  • 2 cups cooked chicken breast or thighs, shredded or sliced
  • 3 cups Napa cabbage or romaine lettuce, chopped
  • 1 cup carrots, julienned
  • 2 green onions, sliced
  • 2 tbsp fresh cilantro or parsley, chopped
  • 1/4 cup sliced almonds
  • 2 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large bowl, combine the cabbage, carrots, green onions, cilantro, and chicken.
  2. In a separate small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, salt, and pepper.
  3. Pour the dressing over the salad and toss until evenly coated.
  4. Add sliced almonds and toss again just before serving.
  5. Serve immediately or chill for 30 minutes for deeper flavor.
