Avocado Egg Toast

A simple and nutritious avocado egg toast featuring creamy mashed avocado and a perfectly cooked egg on crispy toasted bread.

Ingredients

  • 2 slices of bread
  • 1 ripe avocado
  • 12 eggs (fried, poached, or soft-boiled)
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 1 tbsp olive oil or butter (for cooking the egg)
  • Optional toppings: red pepper flakes, cherry tomatoes, microgreens, everything seasoning

Instructions

  1. Toast the bread slices until golden and crisp.
  2. In a small bowl, mash the avocado with lemon juice, salt, and black pepper.
  3. Heat olive oil or butter in a pan and cook the egg to your preferred style (fried, sunny-side up, or over-easy).
  4. Spread the mashed avocado evenly over the toasted bread.
  5. Top each toast with the cooked egg.
  6. Add optional toppings such as red pepper flakes, tomatoes, or everything seasoning.
  7. Serve immediately.

Notes

  • Use sourdough or whole-grain bread for extra flavor and sturdiness.
  • Ripe avocados mash more smoothly and taste creamier.
  • For added protein, include two eggs or add smoked salmon.
