  • 4 boneless, skinless chicken breasts
  • 1 cup spinach leaves (optional filling)
  • 4 slices mozzarella or provolone cheese
  • 4 slices deli ham or cooked bacon (optional)
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • For Creamy Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 tsp ground nutmeg (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly.
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even 1/4-inch thickness.
  3. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  4. Place a slice of cheese and ham or spinach on each chicken breast. Roll tightly and secure with toothpicks.
  5. Heat olive oil in a skillet over medium-high heat. Sear the chicken rolls until browned on all sides, about 4–5 minutes total. Transfer to the prepared baking dish.
  6. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  7. Gradually add milk and heavy cream, whisking constantly until smooth and slightly thickened.
  8. Stir in Parmesan cheese, nutmeg (if using), salt, and pepper. Simmer until the sauce is creamy and coats the spoon.
  9. Pour the sauce over the chicken rolls in the baking dish.
  10. Bake for 20–25 minutes, or until the chicken is cooked through and the sauce is bubbling.
  11. Garnish with chopped parsley and serve hot.

Notes

  • Toothpicks can be removed after baking to ease serving.
  • Feel free to use different cheeses or fillings like mushrooms or sun-dried tomatoes.
  • Serve with mashed potatoes, pasta, or steamed vegetables for a complete meal.
  • The sauce can be doubled for extra creaminess or served over sides.
