- 4 large potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp flour
- 1 tbsp toasted sesame seeds
- 1/4 tsp ground ginger
- Preheat the oven to 375°F (190°C). Grease a baking dish.
- Boil potatoes in salted water until tender, then drain.
- Mash potatoes with butter, milk, salt, and pepper until smooth. Spread evenly in the baking dish.
- Heat olive oil in a saucepan and sauté onions and garlic until softened.
- Stir in flour and cook for 1 minute to form a roux.
- Whisk in vegetable broth, soy sauce, sesame oil, and ginger. Simmer until thickened.
- Pour the sesame gravy over the mashed potatoes.
- Bake for 20 minutes or until heated through and lightly golden on top.
- Sprinkle with toasted sesame seeds before serving.

- Use Yukon Gold potatoes for extra creaminess.
- Add mushrooms to the gravy for deeper flavour.
