  • 1/2 cup mixed nuts (pecans, walnuts, almonds), finely chopped
  • 1/3 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 ripe banana, sliced (for layering)
  • 1/3 cup caramel sauce (plus more for topping)
  • Optional: sea salt flakes for garnish

Instructions

  1. In a bowl, combine crushed graham crackers, chopped nuts, and melted butter. Press the mixture firmly into the base of a springform pan or serving dish. Chill in the fridge while preparing the filling.
  2. In another bowl, beat softened cream cheese and granulated sugar until smooth and creamy.
  3. Add sour cream (or yogurt) and vanilla extract, mixing until fully incorporated.
  4. Gently fold in mashed bananas until evenly distributed throughout the filling.
  5. Spread two-thirds of the filling over the chilled crust. Arrange banana slices in a single layer over the filling.
  6. Top with remaining filling and smooth the surface with a spatula.
  7. Refrigerate for at least 4 hours, preferably overnight, to allow the cheesecake to fully set.
  8. Before serving, drizzle with caramel sauce and sprinkle with extra chopped nuts and sea salt flakes if using.

  • To prevent bananas from browning, lightly coat slices with lemon juice before layering.
  • For best slicing, dip your knife in hot water and wipe clean between cuts.
