  • 24 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup sour cream or heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • 2 tablespoons unsalted butter (for topping)
  • 1/4 cup light brown sugar (for topping)
  • 2 tablespoons dark rum or banana liqueur (optional)
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup caramel sauce (plus more for serving)

Instructions

  1. Preheat oven to 325 °F (160 °C). Mix crumbs and melted butter; press into the base of a springform pan. Chill while preparing filling.
  2. Beat cream cheese with granulated and brown sugar until smooth. Add sour cream, vanilla, and eggs one at a time, mixing just until incorporated.
  3. Pour filling over crust. Bake for 55–65 minutes until edges are set and center jiggles slightly. Turn off oven, crack door, and let rest for 1 hour.
  4. Cool completely, then refrigerate for at least 4 hours or overnight.
  5. For topping: Melt butter in a skillet, add brown sugar, and stir until dissolved. Add banana slices and cook until caramelized. Add rum and flambe if desired or simmer until thickened. Stir in cinnamon (optional).
  6. Top chilled cheesecake with banana mixture and drizzle with caramel sauce. Slice and serve.
