- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mashed ripe banana (about 1 large banana)
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup milk
- 1 large egg
- 1 tsp vanilla extract
- Banana Glaze:
- 1 cup powdered sugar
- 2–3 tbsp mashed banana
- 1–2 tsp milk (as needed)
- 1/4 tsp vanilla extract
- Preheat oven to 350°F (175°C). Grease a donut pan lightly.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, mix mashed banana, granulated sugar, brown sugar, melted butter, milk, egg, and vanilla until smooth.
- Combine dry ingredients with the wet mixture and stir just until incorporated.
- Spoon or pipe the batter into the donut cavities, filling each about 3/4 full.
- Bake for 10–12 minutes, or until the donuts spring back when touched. Cool on a wire rack.
- For the glaze, whisk powdered sugar, mashed banana, vanilla, and a splash of milk until smooth and pourable.
- Dip cooled donuts into the glaze and place on a rack to set.
Notes
- Use very ripe bananas for the best flavor.
- Do not overmix the batter to keep donuts light and tender.
- Add cinnamon or nutmeg for extra warmth.
- For a thinner glaze, add more milk; for thicker, add more powdered sugar.
