- 1 pizza dough (store-bought or homemade)
- 1 cup cooked chicken, shredded or diced
- 1/2 cup barbecue sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp olive oil
- Preheat oven to 475°F (245°C). Lightly oil a pizza pan or baking sheet.
- Roll out the pizza dough into your desired shape.
- Brush the dough lightly with olive oil.
- Spread most of the barbecue sauce over the dough, reserving a little for the chicken.
- Toss the cooked chicken with the remaining barbecue sauce.
- Sprinkle half the mozzarella over the pizza, then add BBQ chicken, red onions, and cheddar cheese.
- Top with the remaining mozzarella.
- Bake for 12–15 minutes or until the crust is golden and cheese is bubbly.
- Remove from the oven and sprinkle with fresh cilantro before serving.
Notes
- Use a smoky or spicy BBQ sauce for extra flavor.
- Rotisserie chicken works great for quick prep.
- Add jalapeños or pineapple for variation.
