Big Mac Pasta Salad

Big Mac Pasta Salad is a fun twist on the classic fast-food burger, combining pasta, ground beef, pickles, cheese, and a creamy ‘special sauce’ dressing for a crowd-pleasing potluck or picnic dish.

Ingredients

  • 8 oz elbow macaroni or rotini pasta
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup diced dill pickles
  • 1/2 cup diced red onion
  • 2 cups chopped romaine or iceberg lettuce
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon pickle juice
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water. Set aside.
  2. In a skillet over medium heat, cook ground beef with salt and pepper until browned. Drain excess grease and let cool.
  3. In a large bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, onion powder, and garlic powder to make the dressing.
  4. Add the cooked pasta, ground beef, cheese, pickles, and red onion to the bowl. Toss until everything is well coated in the dressing.
  5. Just before serving, fold in the chopped lettuce for freshness and crunch.
  6. Garnish with sesame seeds if desired. Serve chilled or at room temperature.

Notes

  • Wait to add the lettuce until just before serving to keep it crisp.
  • Can be made a few hours ahead and stored in the refrigerator.
  • Use shell pasta or bowties as alternatives.
