Black Bean Corn Salsa

A fresh, colorful, and zesty black bean corn salsa loaded with veggies, herbs, and lime—perfect as a dip, topping, or side dish.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1 jalapeño, seeded and finely chopped
  • 1/3 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, corn, tomatoes, red onion, bell pepper, jalapeño, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salsa mixture and toss gently to combine.
  4. Adjust seasoning to taste.
  5. Refrigerate for at least 20 minutes to allow flavors to meld before serving.

Notes

  • Add avocado right before serving for creaminess.
  • Use fresh grilled corn for extra flavor.
  • Great as a dip, taco topping, or side salad.
