- 1/2 cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup fresh or frozen blackberries (if frozen, do not thaw)
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp milk or cream (for glaze)
- 1/4 tsp vanilla extract (for glaze)
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, whisk together melted butter and brown sugar until smooth.
- Add egg and vanilla extract; mix until fully combined.
- Stir in flour, baking powder, and salt until just incorporated.
- Gently fold in blackberries, being careful not to overmix or crush them.
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes or until the top is golden and a toothpick comes out with moist crumbs (not wet batter).
- Let cool completely in the pan.
- For the glaze, mix powdered sugar, vanilla extract, and milk until smooth and pourable. Drizzle over cooled blondies.
- Slice into bars and serve.
Notes
- Use fresh blackberries for best texture; frozen can add extra moisture but still work well.
- Do not overbake – the center should be soft and chewy.
- Glaze can be made thicker or thinner by adjusting milk quantity.
