  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh or frozen blackberries (if frozen, do not thaw)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp milk or cream (for glaze)
  • 1/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together melted butter and brown sugar until smooth.
  3. Add egg and vanilla extract; mix until fully combined.
  4. Stir in flour, baking powder, and salt until just incorporated.
  5. Gently fold in blackberries, being careful not to overmix or crush them.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25–30 minutes or until the top is golden and a toothpick comes out with moist crumbs (not wet batter).
  8. Let cool completely in the pan.
  9. For the glaze, mix powdered sugar, vanilla extract, and milk until smooth and pourable. Drizzle over cooled blondies.
  10. Slice into bars and serve.

Notes

  • Use fresh blackberries for best texture; frozen can add extra moisture but still work well.
  • Do not overbake – the center should be soft and chewy.
  • Glaze can be made thicker or thinner by adjusting milk quantity.
