- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup fresh or frozen blueberries (if frozen, do not thaw)
- 1 tablespoon flour (for tossing blueberries)
- Whipped Frosting:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Add the dry ingredients to the wet ingredients in batches, alternating with the milk, beginning and ending with the dry mixture.
- Toss blueberries with 1 tablespoon flour, then gently fold into the batter.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For the frosting, beat heavy whipping cream, powdered sugar, and vanilla until stiff peaks form.
- Pipe or spread whipped frosting onto cooled cupcakes. Decorate with extra blueberries if desired.
