Caramel Almond Crumble Bars

These caramel almond crumble bars feature a buttery oat crust, gooey caramel center, and a crunchy almond topping — perfect for dessert or an indulgent snack.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 3/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup caramel sauce or soft caramel candies melted with 2 tablespoons cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon sea salt (optional, for topping)
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt.
  3. Stir in melted butter until crumbly and well combined.
  4. Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes.
  5. Meanwhile, in a small bowl, mix caramel sauce with vanilla extract until smooth.
  6. Remove crust from the oven and pour caramel mixture evenly over the crust.
  7. Sprinkle sliced almonds over the caramel, then top with remaining crumble mixture.
  8. Bake for an additional 20–25 minutes, or until golden brown and bubbly.
  9. Cool completely in the pan, then lift out and cut into bars.
  10. Sprinkle with sea salt if desired before serving.

Notes

  • For homemade caramel, melt soft caramel candies with a splash of cream over low heat.
  • Bars will firm up as they cool, making them easier to cut.
  • Use toasted almonds for extra flavor and crunch.
  • Store in an airtight container at room temperature for up to 4 days.
