- 2 large onions, thinly sliced
- 1 tbsp brown sugar
- 1 lb sausage meat (pork or beef)
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Sesame seeds (optional)
- Heat olive oil in a skillet over medium heat. Add sliced onions and cook until softened, about 10 minutes.
- Stir in brown sugar and continue cooking for 10–15 minutes until onions are caramelized. Let cool slightly.
- In a bowl, combine sausage meat with thyme, sage, salt, and pepper. Mix well.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry and cut it lengthwise into two long strips.
- Divide the sausage mixture between the two strips, placing it in a long log down each center.
- Top each sausage log with caramelized onions.
- Brush pastry edges with egg wash, then fold the pastry over the filling, sealing tightly.
- Cut each long roll into smaller pieces (6–8 per roll).
- Place sausage rolls seam-side down on the baking sheet. Brush tops with egg wash and sprinkle with sesame seeds if desired.
- Bake for 20–25 minutes, or until golden brown and cooked through.
