  • For queso dip:
  • 1 1/2 cups shredded cheese blend (cheddar, Monterey Jack, pepper jack)
  • 1/2 cup milk or cream
  • 1/2 cup diced tomatoes with green chilies (e.g., Rotel)
  • Optional: 1/4 teaspoon each chili powder, cumin, garlic powder

Instructions

  1. Preheat oven to 375 °F (190 °C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sausage, cheddar cheese, biscuit mix, and parsley (if using). Mix well and shape into 1-inch balls.
  3. Place sausage balls 1 inch apart on the baking sheet and bake for 18–20 minutes or until golden brown and cooked through.
  4. While baking, prepare queso dip: Melt shredded cheese with milk in a saucepan over low heat, stirring until smooth.
  5. Add diced tomatoes and chilies along with optional spices. Continue stirring until warm and creamy.
  6. Transfer sausage balls to a serving platter and serve with warm queso dip in the center. Garnish with chopped parsley or cilantro if desired.
