Cheesy Chicken and Broccoli Skillet

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cups broccoli florets
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1/2 tsp paprika (optional)
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add the diced onion and cook until soft, about 3-4 minutes. Add the garlic and cook for another 30 seconds.
- Add the broccoli florets and pour in the chicken broth. Cover and steam for about 5 minutes until the broccoli is tender.
- Return the cooked chicken to the skillet. Stir in the heavy cream and bring to a simmer.
- Sprinkle the shredded cheddar cheese over the top and stir until melted and creamy.
- Season with salt, pepper, and paprika if using. Serve warm.

- Use rotisserie chicken for an even quicker meal.
- Try adding cooked rice or pasta to make it more filling.
- Can substitute half-and-half for heavy cream for a lighter option.
