- 2 cups mashed potatoes (preferably chilled)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup all-purpose flour (plus more for coating)
- 2 tablespoons chopped green onions or chives
- Salt and pepper to taste
- 2 tablespoons vegetable oil or butter (for frying)
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, egg, flour, green onions, salt, and pepper. Mix until well combined.
- Form the mixture into small patties, about 1/2 inch thick.
- Lightly coat each patty with additional flour to help with browning and crispiness.
- Heat oil or butter in a large skillet over medium heat.
- Fry the patties for 3–4 minutes on each side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm, optionally with sour cream or dipping sauce.

- Great way to use leftover mashed potatoes.
