Cheesy Spinach Feta is a flavorful and creamy side dish or appetizer combining tender spinach with tangy feta cheese and melted cheese for a rich, savory treat.

  • 4 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent.
  3. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine cooked spinach mixture with cream cheese, feta, and mozzarella. Season with salt and pepper.
  5. Transfer mixture to a baking dish and bake for 20 minutes, or until bubbly and golden on top.
  6. Serve warm as a side dish or dip with bread or crackers.

Notes

  • For a lighter version, use part-skim cheeses.
  • Add crushed red pepper flakes for a spicy kick.
