Ingredients

Scale
  • 1 cup couscous
  • 1 1/4 cups chicken broth or water
  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 1 cup zucchini, diced
  • 1 cup red bell pepper, diced
  • 1 cup carrot, diced
  • 1/2 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley or cilantro, chopped
  • Optional: lemon wedges for serving

Instructions

  1. In a small saucepan, bring chicken broth or water to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add onion, carrot, zucchini, and red bell pepper. Sauté for 5–6 minutes until vegetables are tender.
  4. Add garlic, cumin, paprika, salt, and black pepper, and cook for another 1 minute.
  5. Return the cooked chicken to the skillet and stir to combine.
  6. Add the fluffed couscous to the skillet, tossing gently to mix everything evenly.
  7. Garnish with fresh parsley or cilantro, and serve warm with lemon wedges if desired.

Notes

  • For extra flavor, toast the couscous in olive oil before adding broth.
  • You can substitute chicken with chickpeas for a vegetarian version.
  • Try adding raisins or dried apricots for a sweet contrast.
  • Adjust spices to your taste—add chili flakes for a spicy kick.
