Chicken Chow Mein

A classic Chinese-style Chicken Chow Mein made with tender chicken, stir-fried noodles, and crisp vegetables tossed in a savory sauce.

  • 8 oz chow mein noodles (or egg noodles)
  • 1 lb boneless skinless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced onions
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • 2 green onions, sliced (optional)

Instructions

  1. Cook the chow mein noodles according to package instructions, drain, and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, chicken broth, and cornstarch. Set aside.
  3. Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
  4. Add the sliced chicken, season lightly with salt and pepper, and stir-fry until cooked through. Remove and set aside.
  5. Add remaining oil to the wok, then sauté garlic and ginger until fragrant.
  6. Add cabbage, carrots, bell peppers, and onions. Stir-fry for 3–4 minutes until slightly tender.
  7. Return the cooked chicken to the wok.
  8. Add the cooked noodles and pour the sauce over everything.
  9. Toss well and cook for 2–3 minutes until the sauce thickens and coats the noodles evenly.
  10. Garnish with green onions if desired and serve hot.

Notes

  • You can add bean sprouts for extra crunch.
  • Adjust soy sauce for saltiness preference.
  • Use high heat for authentic stir-fry flavor.
