Chicken Chow Mein

- 8 oz chow mein noodles (or egg noodles)
- 1 lb boneless skinless chicken breast, thinly sliced
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1/2 cup sliced bell peppers
- 1/2 cup sliced onions
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1/2 cup chicken broth
- Salt and black pepper to taste
- 2 green onions, sliced (optional)
- Cook the chow mein noodles according to package instructions, drain, and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, chicken broth, and cornstarch. Set aside.
- Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
- Add the sliced chicken, season lightly with salt and pepper, and stir-fry until cooked through. Remove and set aside.
- Add remaining oil to the wok, then sauté garlic and ginger until fragrant.
- Add cabbage, carrots, bell peppers, and onions. Stir-fry for 3–4 minutes until slightly tender.
- Return the cooked chicken to the wok.
- Add the cooked noodles and pour the sauce over everything.
- Toss well and cook for 2–3 minutes until the sauce thickens and coats the noodles evenly.
- Garnish with green onions if desired and serve hot.
Notes
- You can add bean sprouts for extra crunch.
- Adjust soy sauce for saltiness preference.
- Use high heat for authentic stir-fry flavor.
