Chicken Quesadilla with Caramelised Onion and Herbs

A flavorful chicken quesadilla filled with tender seasoned chicken, sweet caramelised onions, melted cheese, and fresh herbs—crispy on the outside and deliciously melty on the inside.

  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 cups cooked shredded chicken
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh herbs (parsley, cilantro, or basil)
  • 4 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the sliced onions and cook slowly for 10–15 minutes until golden and caramelised. Set aside.
  2. In the same pan, melt butter and add shredded chicken, paprika, garlic powder, salt, and pepper. Cook for 2–3 minutes to warm and season.
  3. Assemble each quesadilla by sprinkling cheese on half of a tortilla, then adding chicken, caramelised onions, and herbs. Top with more cheese and fold over.
  4. Heat a clean skillet over medium heat and cook each quesadilla for 2–3 minutes per side until the tortilla is crisp and the cheese is melted.
  5. Slice into wedges and serve warm.

Notes

  • For extra flavor, add a spoonful of BBQ sauce or chipotle mayo inside the quesadilla.
  • Use a mix of cheeses for the best melt and flavor.
  • Leftover roasted chicken works perfectly for this recipe.
