Chocolate Cherry Cordial Truffles

Rich and indulgent bite-sized truffles featuring a creamy chocolate ganache center infused with cherry flavor, coated in chocolate, and reminiscent of classic chocolate-covered cherries.

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup maraschino cherry juice
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped maraschino cherries
  • 2 cups melting chocolate or candy coating
  • Optional: sprinkles or cocoa powder for garnish

Instructions

  1. In a small saucepan, heat heavy cream and butter over medium heat until just simmering.
  2. Pour the hot cream mixture over the semi-sweet chocolate chips in a heatproof bowl and let sit for 2 minutes.
  3. Stir until smooth, then mix in cherry juice, vanilla extract, and chopped maraschino cherries.
  4. Cover and refrigerate the mixture for at least 2 hours or until firm enough to scoop.
  5. Using a small scoop or spoon, form the mixture into bite-sized balls and place on a parchment-lined baking sheet.
  6. Freeze truffles for 30 minutes to firm them up.
  7. Melt the candy coating or melting chocolate in a microwave-safe bowl in 30-second increments, stirring between each until smooth.
  8. Dip each chilled truffle into the melted chocolate, shaking off excess, and place back on the parchment paper.
  9. Decorate with sprinkles or a dusting of cocoa powder if desired.
  10. Allow chocolate to set completely before serving or storing.

Notes

  • For a stronger cherry flavor, increase cherry juice to 1/3 cup and reduce cream slightly.
  • Store truffles in an airtight container in the refrigerator for up to 2 weeks.
  • Let truffles sit at room temperature for a few minutes before serving for best texture.
