  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and finely chopped apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup buttermilk
  • For the Chocolate Glaze:
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons butter
  • 2 tablespoons corn syrup or honey
  • 1 tablespoon milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan or 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat butter, oil, granulated sugar, and brown sugar until light and creamy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, alternating with buttermilk. Mix just until combined.
  6. Fold in chopped apples and nuts (if using).
  7. Pour batter into prepared pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in pan for 10–15 minutes before transferring to a wire rack to cool completely.
  9. For the glaze: In a small saucepan or microwave-safe bowl, melt chocolate chips, butter, corn syrup, and milk together. Stir until smooth and glossy.
  10. Drizzle glaze over cooled cake and let set before slicing and serving.

Notes

  • You can substitute applesauce for part of the oil for a lighter version.
  • Best served the next day after flavors have melded.
  • Store at room temperature for 2–3 days or refrigerate for up to a week.
