- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup milk
- 1/3 cup fruit jam or preserves (e.g., raspberry, strawberry, or cherry)
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture alternately with the milk, mixing until a soft dough forms.
- Scoop about 1 tablespoon of dough and flatten it slightly. Place 1/2 teaspoon of jam in the center, then top with another small piece of dough and seal the edges to enclose the jam.
- Place cookies on the prepared baking sheet about 2 inches apart.
- Bake for 10–12 minutes, or until cookies are set around the edges. Let cool on the sheet for 5 minutes before transferring to a wire rack.
