Chocolate Lava Cake

Chocolate Lava Cake is a rich and decadent dessert with a crisp outer layer and a gooey, molten chocolate center. Perfect for special occasions or an indulgent treat, it’s best served warm with a scoop of vanilla ice cream or fresh berries.

  • 1/2 cup (1 stick) unsalted butter
  • 6 oz semi-sweet or dark chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/8 tsp salt
  • 2 tbsp all-purpose flour
  • Butter and cocoa powder for greasing ramekins
  • Optional toppings: powdered sugar, vanilla ice cream, fresh berries

Instructions

  1. Preheat oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust with cocoa powder. Tap out excess.
  2. In a heatproof bowl, melt butter and chocolate together over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk together eggs, egg yolks, sugar, and salt until light and thickened, about 1–2 minutes.
  4. Slowly whisk in the melted chocolate mixture.
  5. Fold in the flour until just combined.
  6. Divide batter evenly among the prepared ramekins.
  7. Bake for 12–14 minutes, until the edges are set but the center is still soft.
  8. Let sit for 1 minute, then invert each ramekin onto a plate. Serve immediately with toppings of choice.

Notes

  • Do not overbake—center should remain molten for the signature lava effect.
  • You can prepare the batter ahead of time and refrigerate for up to 24 hours.
  • Bring to room temperature before baking if chilled.
  • Can be baked in muffin tins if ramekins are unavailable—adjust bake time accordingly.
