Chocolate Mint Brownies

These Chocolate Mint Brownies are a rich and fudgy dessert with a refreshing minty layer and a silky chocolate ganache topping. Perfect for holidays or any time you crave the classic chocolate-mint combo.

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup unsalted butter (for mint layer), softened
  • 1 cup powdered sugar (for mint layer)
  • 1 tbsp milk
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • 3/4 cup semi-sweet chocolate chips (for ganache)
  • 2 tbsp butter (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium saucepan, melt 1/2 cup butter. Remove from heat and stir in sugar, eggs, and vanilla.
  3. Beat in cocoa powder, flour, salt, and baking powder until well combined.
  4. Spread batter evenly into the prepared pan and bake for 20–25 minutes. Let cool completely.
  5. For the mint layer: Beat 1/4 cup butter until creamy. Add powdered sugar, milk, peppermint extract, and a few drops of green food coloring. Mix until smooth and spreadable.
  6. Spread the mint layer over the cooled brownies. Chill in the refrigerator until set (about 20 minutes).
  7. For ganache: Melt chocolate chips and 2 tbsp butter in the microwave or double boiler until smooth.
  8. Pour ganache over the mint layer and spread evenly. Chill until firm.
  9. Cut into squares and serve chilled or at room temperature.

Notes

  • Use peppermint extract, not mint extract, for a true mint flavor.
  • For easier slicing, dip a sharp knife in hot water and wipe clean between cuts.
  • Brownies can be made a day ahead and stored in the refrigerator.
  • Optional: top with crushed peppermint candies or chocolate shavings.
