Chocolate Oatmeal No-Bake Cookies

Chocolate Oatmeal No-Bake Cookies are rich, chewy, and satisfying treats made with cocoa, oats, and peanut butter. These classic cookies require no oven, making them quick and easy for any occasion.

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 3 cups quick-cooking oats
  • Pinch of salt

Instructions

  1. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
  2. Bring to a rolling boil and let boil for 1 minute without stirring.
  3. Remove from heat and immediately stir in peanut butter, vanilla extract, and salt until smooth.
  4. Add oats and stir until fully combined.
  5. Drop spoonfuls of the mixture onto parchment-lined baking sheets.
  6. Let cookies cool and set at room temperature for about 30 minutes, or refrigerate to speed up the process.

Notes

  • Use quick oats for the best texture — old-fashioned oats may be too chewy.
  • Do not overboil the mixture or cookies may become dry and crumbly.
  • Add shredded coconut, chopped nuts, or chocolate chips for variation.
  • Store in an airtight container at room temperature for up to 1 week, or refrigerate for longer shelf life.
