- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup fresh strawberries, finely chopped
- 1/4 cup granulated sugar (for strawberries)
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips (for ganache)
- 1/2 cup heavy cream (for ganache)
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, mix melted butter, sugar, eggs, and vanilla extract until smooth. Stir in milk.
- Gradually add dry ingredients to the wet mixture and mix until just combined. Pour into prepared pan and bake for 20–25 minutes or until a toothpick inserted comes out clean. Let cool completely.
- In a small bowl, toss chopped strawberries with 1/4 cup sugar and let sit for 10 minutes, then drain excess liquid.
- In a mixing bowl, beat cream cheese and powdered sugar until smooth. Fold in the strawberries.
- In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese-strawberry mixture.
- Spread the strawberry cream evenly over the cooled chocolate base and refrigerate for at least 30 minutes to set.
- For the ganache, heat 1/2 cup heavy cream until just simmering, then pour over chocolate chips. Let sit 1 minute, then stir until smooth.
- Spread ganache over the chilled strawberry layer. Chill again for at least 1 hour before slicing into bars.
