Chocolate Strawberry Cream Cake Bars

Decadent layered dessert bars made with a fudgy chocolate cake base, a creamy strawberry layer, and a smooth chocolate ganache topping. These chocolate strawberry cream cake bars are perfect for special occasions or indulgent treats.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, finely chopped
  • 1/4 cup granulated sugar (for strawberries)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix melted butter, sugar, eggs, and vanilla extract until smooth. Stir in milk.
  4. Gradually add dry ingredients to the wet mixture and mix until just combined. Pour into prepared pan and bake for 20–25 minutes or until a toothpick inserted comes out clean. Let cool completely.
  5. In a small bowl, toss chopped strawberries with 1/4 cup sugar and let sit for 10 minutes, then drain excess liquid.
  6. In a mixing bowl, beat cream cheese and powdered sugar until smooth. Fold in the strawberries.
  7. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese-strawberry mixture.
  8. Spread the strawberry cream evenly over the cooled chocolate base and refrigerate for at least 30 minutes to set.
  9. For the ganache, heat 1/2 cup heavy cream until just simmering, then pour over chocolate chips. Let sit 1 minute, then stir until smooth.
  10. Spread ganache over the chilled strawberry layer. Chill again for at least 1 hour before slicing into bars.

Notes

  • Use ripe, sweet strawberries for the best flavor.
  • Bars are best served chilled but can sit at room temperature for 20–30 minutes before serving.
  • Store in an airtight container in the fridge for up to 4 days.
