Chocolate Strawberry Tarts

These Chocolate Strawberry Tarts are a decadent dessert featuring a rich chocolate ganache filling topped with fresh, juicy strawberries. Perfect for special occasions or as a romantic treat.

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pint fresh strawberries, hulled and halved

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine flour, cocoa powder, powdered sugar, and salt.
  3. Add cold butter and pulse until the mixture resembles coarse crumbs.
  4. Add egg yolk and ice water and pulse until dough forms.
  5. Press dough into tart pans and refrigerate for 15 minutes.
  6. Prick the bottom of the crusts with a fork and bake for 15 minutes. Let cool.
  7. To make the ganache, heat cream in a saucepan until just simmering.
  8. Pour hot cream over chopped chocolate and let sit for 2 minutes.
  9. Add butter and vanilla extract, then stir until smooth.
  10. Pour chocolate ganache into the cooled tart shells and smooth the top.
  11. Arrange halved strawberries on top of the ganache.
  12. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • You can use a store-bought tart shell to save time.
  • Brush strawberries with a light glaze for a shiny finish.
  • Best served chilled.
