- 2 cups cooked chicken breast, chopped or shredded
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 4 cups chopped romaine lettuce
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- In a large bowl, combine the chopped chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and romaine lettuce.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
