  • 8 oz rigatoni or tube pasta
  • 2 apples, peeled and chopped
  • 1 tsp ground cinnamon
  • 2 tbsp brown sugar or honey
  • 1 cup apple cider or apple juice
  • 2 cups beef broth
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium‑high heat. Season beef with salt and pepper, then sear on all sides until browned. Remove and set aside.
  2. In the same pot, melt the butter. Add chopped apples and cook until softened, about 5 minutes.
  3. Stir in cinnamon, brown sugar (or honey), and apple cider. Simmer until apples begin to break down, about 5 minutes.
  4. Return the beef to the pot. Add beef broth and bring to a gentle simmer. Cover and cook for 45 minutes, or until beef is tender. If using, stir in cornstarch slurry and cook until the sauce thickens.
  5. Meanwhile, cook pasta separately in salted boiling water until al dente. Drain and set aside.
  6. Once the beef‑apple mixture is done, gently fold in cooked pasta until well coated.
  7. Serve warm, optionally garnished with a sprinkle of cinnamon or chopped parsley.
