- 1 1/2 cups all-purpose flour
- 3 tbsp sugar
- 2 tsp ground cinnamon
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp melted butter
- 1 tsp vanilla extract
- Butter for cooking
- Maple syrup for serving
- In a bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt.
- In another bowl, whisk the milk, egg, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Heat a lightly buttered skillet or griddle over medium heat.
- Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve warm with butter and plenty of syrup.
Notes
- Add chocolate chips or pecans for extra flavor.
- For stronger cinnamon flavor, sprinkle cinnamon sugar on top while cooking.
- Keep pancakes warm in a low oven until serving.
