- 2 oranges, peeled and sliced into rounds
- 1 grapefruit, peeled and sliced into rounds
- 1 small fennel bulb, thinly sliced
- 1 ball burrata cheese (about 4 oz)
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- Salt and freshly ground black pepper, to taste
- 2 tbsp fresh mint or basil leaves, torn
- Optional: 1 tbsp toasted pistachios or almonds for garnish
- Arrange orange and grapefruit slices on a serving platter or shallow bowl.
- Top with thinly sliced fennel.
- Tear the burrata and gently place it over the salad.
- In a small bowl, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper.
- Drizzle the dressing over the salad just before serving.
- Garnish with fresh herbs and toasted nuts if using. Serve immediately.
