Citrus and Burrata Fennel Salad is a refreshing, elegant salad featuring creamy burrata cheese, crisp shaved fennel, and juicy citrus slices, perfect as a light starter or side dish.

Ingredients

  • 2 oranges, peeled and sliced into rounds
  • 1 grapefruit, peeled and sliced into rounds
  • 1 small fennel bulb, thinly sliced
  • 1 ball burrata cheese (about 4 oz)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh mint or basil leaves, torn
  • Optional: 1 tbsp toasted pistachios or almonds for garnish

Instructions

  1. Arrange orange and grapefruit slices on a serving platter or shallow bowl.
  2. Top with thinly sliced fennel.
  3. Tear the burrata and gently place it over the salad.
  4. In a small bowl, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper.
  5. Drizzle the dressing over the salad just before serving.
  6. Garnish with fresh herbs and toasted nuts if using. Serve immediately.

Notes

  • Use a mandoline for ultra-thin fennel slices.
  • Blood oranges or cara cara oranges can add color and variety.
  • Serve chilled or at room temperature.
  • Best assembled just before serving to maintain texture and freshness.
