- 2 large eggs
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 pound ground beef
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 2 cups canned crushed tomatoes
- 1 tablespoon tomato paste
- 1 small onion, finely chopped
- 1 tablespoon olive oil (for sauce)
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
- In a mixing bowl, combine flour and salt. Make a well in the center, add eggs and olive oil, and mix to form a dough. Knead for 5-10 minutes until smooth. Let rest for 30 minutes covered.
- Meanwhile, in a skillet over medium heat, cook ground beef until browned. Add garlic, salt, pepper, and cook for another 2 minutes. Remove from heat and mix in Parmesan cheese. Set aside to cool.
- Roll out pasta dough into thin sheets. Place small spoonfuls of beef filling on one sheet, cover with another sheet, press around filling to seal, and cut into ravioli shapes.
- In a saucepan, heat olive oil and sauté onion until soft. Add crushed tomatoes, tomato paste, basil, salt, and pepper. Simmer for 20 minutes.
- Bring a large pot of salted water to a boil. Cook ravioli in batches for 3-4 minutes or until they float.
- Drain ravioli and add to the tomato sauce. Gently toss to coat.
- Serve hot, garnished with fresh basil or parsley if desired.

- You can freeze uncooked ravioli for later use.
