Classic Belgian Waffles

Light, crisp, and fluffy Belgian waffles with deep pockets perfect for holding syrup, whipped cream, or fresh fruit.

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, separated
  • 1 3/4 cups milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk egg yolks, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the whipped egg whites into the batter.
  7. Lightly grease the waffle iron and pour in the batter.
  8. Cook until the waffles are golden and crisp.
  9. Serve warm with syrup, fruit, butter, or whipped cream.

Notes

  • Beating the egg whites separately makes waffles extra fluffy.
  • A Belgian waffle maker creates deeper pockets than a standard iron.
  • Do not overmix the batter; a few lumps are okay.
