- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 large eggs, separated
- 1 3/4 cups milk
- 1/3 cup melted butter
- 1 tsp vanilla extract
- Preheat your waffle iron according to manufacturer instructions.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk egg yolks, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the whipped egg whites into the batter.
- Lightly grease the waffle iron and pour in the batter.
- Cook until the waffles are golden and crisp.
- Serve warm with syrup, fruit, butter, or whipped cream.
Notes
- Beating the egg whites separately makes waffles extra fluffy.
- A Belgian waffle maker creates deeper pockets than a standard iron.
- Do not overmix the batter; a few lumps are okay.
