- 1 lb (450g) boneless, skinless chicken thighs or breasts
 
- 1 tablespoon olive oil
 
- 1 onion, diced
 
- 2 cloves garlic, minced
 
- 3 carrots, sliced
 
- 2 celery stalks, sliced
 
- 6 cups chicken broth
 
- 1 teaspoon dried thyme
 
- 1 teaspoon dried parsley
 
- Salt and pepper to taste
 
- 1/2 cup frozen peas (optional)
 
- 2 tablespoons heavy cream (optional, for richness)
 
- For the Dumplings:
 
- 1 cup all-purpose flour
 
- 2 teaspoons baking powder
 
- 1/2 teaspoon salt
 
- 2 tablespoons unsalted butter, melted

- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened, about 5–7 minutes. Add garlic and cook for 1 minute more.
 
- Add chicken, broth, thyme, parsley, salt, and pepper. Bring to a boil, then reduce to a simmer and cook for 20 minutes or until chicken is fully cooked.
 
- Remove chicken, shred it with two forks, and return to the pot. Stir in frozen peas and cream if using.
 
- Meanwhile, make the dumplings by mixing flour, baking powder, and salt in a bowl. Stir in melted butter and milk until just combined (do not overmix).
 
- Drop spoonfuls of the dumpling dough into the simmering soup. Cover and simmer gently for 15 minutes without lifting the lid.
 
- Check that dumplings are cooked through, garnish with extra parsley if desired, and serve hot.

- For a richer broth, use bone-in chicken and simmer longer before removing bones.
 
- Do not lift the lid while dumplings cook to keep them fluffy.
