Instructions

  1. In a medium bowl, combine cooked chicken, mayonnaise, celery, red onion (if using), Dijon mustard, and lemon juice.
  2. Mix well until everything is evenly coated. Season with salt and pepper to taste.
  3. Place lettuce leaves on two slices of bread if desired.
  4. Spoon the chicken salad evenly over the bread slices and top with the remaining slices to form sandwiches.
  5. Cut in half and serve immediately, or wrap and refrigerate until ready to eat.
