- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 pound ground beef
- 1/2 pound ground pork
- 1/4 cup tomato paste
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup red wine (optional)
- 1/2 cup whole milk
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Fresh parsley or basil for garnish (optional)
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery. Sauté for 5-7 minutes until softened.
- Add garlic and cook for 1 more minute until fragrant.
- Add ground beef and pork. Cook until browned, breaking up the meat as it cooks.
- Stir in tomato paste and cook for 2-3 minutes to deepen the flavor.
- Add red wine (if using) and let it simmer for 5 minutes until slightly reduced.
- Pour in crushed tomatoes and stir to combine. Add oregano, basil, salt, and pepper.
- Reduce heat to low and simmer uncovered for 1.5 to 2 hours, stirring occasionally.
- Stir in milk during the last 15 minutes of cooking for added richness and to mellow acidity.
- Adjust seasoning if needed and serve over your favorite pasta. Garnish with fresh herbs if desired.
