- 1 cup all-purpose flour
 
- 1/3 cup unsweetened cocoa powder
 
- 1/2 tsp baking soda
 
- 1/4 tsp salt
 
- 1/2 cup unsalted butter, softened
 
- 1/2 cup granulated sugar
 
- 1/4 cup brown sugar
 
- 1 large egg
 
- 1 tsp vanilla extract

- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
 
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
 
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla extract and beat until combined.
 
- Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
 
- Drop dough by rounded tablespoons onto prepared baking sheets, flattening slightly with your fingers or the bottom of a glass.
 
- Bake for 8–10 minutes, until cookies are just set. Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
 
- Once cookies are cool, scoop about 1/4 cup of softened ice cream onto the flat side of one cookie. Top with another cookie and press gently to sandwich.
 
- Wrap each sandwich in plastic wrap and freeze until firm, about 2 hours.
