Confetti Sprinkle Cookies

Fun and colorful cookies loaded with rainbow sprinkles, perfect for celebrations or adding a touch of joy to any day.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles (plus extra for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract; beat until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the rainbow sprinkles.
  7. Scoop tablespoon-sized balls of dough and roll in extra sprinkles if desired.
  8. Place on prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 10–12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake for soft, chewy centers.
  • Use jimmies-style sprinkles to avoid color bleeding.
  • Chill dough for 30 minutes for thicker cookies.
