Creamy Beef Enchiladas with Melted Cheese

Creamy beef enchiladas with melted cheese are the ultimate comfort food, combining seasoned ground beef, soft tortillas, and a rich cream sauce topped with gooey melted cheese.

  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) green chilies
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 4 oz cream cheese
  • 1/2 cup heavy cream or milk
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  3. Add chopped onion and garlic; cook until softened.
  4. Stir in green chilies, cumin, chili powder, salt, and pepper. Remove from heat.
  5. In a separate saucepan, melt cream cheese over low heat. Stir in sour cream and heavy cream or milk until smooth and slightly thickened. Season with salt and pepper.
  6. Spread a small amount of the cream sauce over the bottom of a greased baking dish.
  7. Spoon beef mixture into each tortilla, sprinkle with shredded cheese, roll up, and place seam-side down in the dish.
  8. Pour remaining cream sauce over the enchiladas and top with the rest of the cheddar and Monterey Jack cheeses.
  9. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes, until cheese is melted and bubbly.
  10. Let cool slightly, garnish with fresh herbs, and serve warm.
