Creamy Chicken Pasta Soup

A rich and comforting creamy chicken pasta soup made with tender chicken, pasta, and vegetables simmered in a flavorful creamy broth.

  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 lb (450 g) boneless chicken breast, diced
  • 6 cups chicken broth
  • 1 cup pasta (penne, rotini, or shells)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add chopped onion and sauté until soft and translucent.
  3. Stir in garlic, carrots, and celery; cook for 2–3 minutes.
  4. Add diced chicken and cook until lightly browned on all sides.
  5. Pour in chicken broth and bring to a gentle boil.
  6. Add pasta, salt, pepper, thyme, and oregano; reduce heat and simmer until pasta is tender.
  7. Lower the heat and stir in heavy cream and Parmesan cheese.
  8. Simmer gently for 3–5 minutes until the soup thickens slightly.
  9. Taste and adjust seasoning as needed.
  10. Garnish with fresh parsley and serve hot.

Notes

  • You can use cooked shredded chicken to save time.
  • For a lighter version, substitute half-and-half for heavy cream.
  • Add spinach or peas for extra nutrition.
