- 2 tbsp olive oil
- Salt and black pepper to taste
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tbsp butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried parsley (or 1 tbsp fresh parsley, chopped)
- 1.5 lbs baby potatoes, halved
- 1 tbsp olive oil (for potatoes)
- Salt, pepper, and herbs for seasoning potatoes
- Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, salt, pepper, and herbs. Spread on a baking sheet and roast for 25–30 minutes or until golden and crispy, flipping halfway through.
- While potatoes roast, season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side or until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium. Add butter and garlic, cooking until fragrant (about 1 minute).
- Pour in chicken broth and scrape up browned bits from the pan. Simmer for 2–3 minutes.
- Add heavy cream, Parmesan, thyme, and parsley. Stir well and simmer for 3–4 minutes until slightly thickened.
- Return the chicken to the skillet, spoon sauce over the top, and let simmer for another 3–5 minutes to absorb flavors.
- Serve chicken with creamy garlic herb sauce alongside the roasted potatoes. Garnish with extra parsley if desired.
