  • 2 packs (about 400g) fresh udon noodles
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200g mushrooms (shiitake, cremini, or mixed), sliced
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1 tbsp soy sauce
  • 1 tsp miso paste (optional for added umami)
  • Salt and pepper to taste
  • Chopped green onions or parsley, for garnish
  • Grated parmesan or nutritional yeast (optional topping)

Instructions

  1. Cook udon noodles according to package instructions, then rinse under cold water and set aside.
  2. Heat olive oil or butter in a large skillet over medium heat. Add garlic and onion, sauté until fragrant and translucent.
  3. Add mushrooms and cook until they are browned and have released their moisture.
  4. Stir in soy sauce and miso paste (if using), cooking for another minute.
  5. Pour in cream and milk, stirring to combine. Simmer for 2–3 minutes until the sauce thickens slightly.
  6. Add the cooked udon noodles and toss to coat evenly in the sauce. Season with salt and pepper to taste.
  7. Cook for another 1–2 minutes until everything is heated through and creamy.
  8. Serve hot, garnished with green onions or parsley and parmesan or nutritional yeast if desired.

Notes

  • Use a mix of mushrooms for deeper flavor.
  • For a vegan version, substitute cream and milk with plant-based alternatives and skip the cheese.
  • Do not overcook the udon noodles to maintain their chewy texture.
