- 2 packs (about 400g) fresh udon noodles
- 2 tbsp olive oil or butter
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 200g mushrooms (shiitake, cremini, or mixed), sliced
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 1 tbsp soy sauce
- 1 tsp miso paste (optional for added umami)
- Salt and pepper to taste
- Chopped green onions or parsley, for garnish
- Grated parmesan or nutritional yeast (optional topping)
- Cook udon noodles according to package instructions, then rinse under cold water and set aside.
- Heat olive oil or butter in a large skillet over medium heat. Add garlic and onion, sauté until fragrant and translucent.
- Add mushrooms and cook until they are browned and have released their moisture.
- Stir in soy sauce and miso paste (if using), cooking for another minute.
- Pour in cream and milk, stirring to combine. Simmer for 2–3 minutes until the sauce thickens slightly.
- Add the cooked udon noodles and toss to coat evenly in the sauce. Season with salt and pepper to taste.
- Cook for another 1–2 minutes until everything is heated through and creamy.
