Creamy Herb Potatoes

Creamy, tender potatoes cooked with a rich herb-infused sauce for a comforting and flavorful side dish.

Ingredients

  • 2 lbs potatoes, sliced thin
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with butter and set aside.
  3. In a saucepan, melt the butter over medium heat and sauté the garlic for 1 minute.
  4. Add the heavy cream, thyme, rosemary, parsley, salt, and pepper. Simmer for 2–3 minutes.
  5. Layer the sliced potatoes evenly in the baking dish.
  6. Pour the creamy herb mixture over the potatoes and top with Parmesan cheese.
  7. Cover the dish with foil and bake for 45 minutes.
  8. Remove the foil and bake an additional 15–20 minutes until golden and tender.
  9. Let cool slightly before serving.

Notes

  • Yukon gold or russet potatoes work best for this recipe.
  • Add fresh herbs on top for extra aroma.
  • You can substitute half-and-half for a lighter version.
