Creamy Herb Potatoes

- 2 lbs potatoes, sliced thin
- 2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried parsley
- Salt, to taste
- Black pepper, to taste
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with butter and set aside.
- In a saucepan, melt the butter over medium heat and sauté the garlic for 1 minute.
- Add the heavy cream, thyme, rosemary, parsley, salt, and pepper. Simmer for 2–3 minutes.
- Layer the sliced potatoes evenly in the baking dish.
- Pour the creamy herb mixture over the potatoes and top with Parmesan cheese.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake an additional 15–20 minutes until golden and tender.
- Let cool slightly before serving.
Notes
- Yukon gold or russet potatoes work best for this recipe.
- Add fresh herbs on top for extra aroma.
- You can substitute half-and-half for a lighter version.
