  • 2 tbsp olive oil
  • 2 large chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 tbsp unsalted butter
  • 8 oz mushrooms, sliced (button or cremini)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp dried thyme
  • 3 cups fresh spinach
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
  2. In the same skillet, add butter and mushrooms. Sauté until mushrooms are browned and their moisture has evaporated, about 6-8 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and stir, scraping up any browned bits. Simmer for 2 minutes.
  5. Add heavy cream, Parmesan cheese, and thyme. Stir and simmer for 3-4 minutes until slightly thickened.
  6. Add spinach and cook until wilted, about 2 minutes.
  7. Return chicken to the skillet and coat with sauce. Simmer 2 more minutes to reheat chicken.
  8. Garnish with parsley if desired and serve hot.

  • Use baby spinach for faster wilting and tender texture.
  • For extra flavor, add a splash of white wine when deglazing the pan with chicken broth.
  • Great served over mashed potatoes, rice, or pasta.
