  • 1/2 cup unsalted butter, softened
  • 1/4 cup chopped pecans (optional)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups whipped topping (like Cool Whip), divided
  • 2 cups canned or fresh sliced peaches (drained if canned)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour and butter until crumbly. Stir in chopped pecans if using.
  2. Press the mixture into the bottom of a greased 9×13 inch baking dish. Bake for 15-18 minutes or until lightly golden. Let it cool completely.
  3. In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
  4. Fold in 1 cup of whipped topping. Spread this layer over the cooled crust.
  5. Layer sliced peaches evenly over the cream cheese mixture.
  6. In another bowl, whisk pudding mix with cold milk until thickened, about 2 minutes.
  7. Spread the pudding over the peach layer.
  8. Top with the remaining whipped topping and smooth the surface.
  9. Refrigerate for at least 2 hours before cutting into bars and serving.

  • Let the crust cool completely before layering to avoid melting the cream cheese mixture.
  • Use fresh, ripe peaches when in season for the best flavor.
