- 12 oz rigatoni pasta
- 1 lb Italian sausage, casings removed
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Cook the rigatoni pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon.
- Add the diced onion and cook until softened, about 5 minutes. Stir in the garlic and red pepper flakes and cook for another minute.
- Pour in the chicken broth and simmer for 2-3 minutes, scraping up any browned bits from the pan.
- Reduce heat to low and stir in the heavy cream. Let simmer for 5 minutes to thicken slightly.
- Stir in the Parmesan cheese until melted and combined. Season with salt and pepper to taste.
- Add the cooked rigatoni to the skillet and toss to coat in the sauce.
- Garnish with chopped parsley and serve warm.
Notes
- Use spicy Italian sausage for a kick of heat.
- Can substitute penne or ziti for rigatoni.
- For a lighter version, use half-and-half instead of heavy cream.
