Creamy Skillet Chicken with Corn and Herbs

A creamy, herb-infused skillet chicken dish simmered with sweet corn, garlic, and fresh herbs for a comforting, flavorful weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup fresh or frozen corn kernels
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh basil, chopped

Instructions

  1. Season the chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil and butter in a skillet over medium heat. Add the chicken and cook for 6–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add the corn and sauté for 2 minutes.
  4. Add the garlic and cook for another 30 seconds until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Simmer for 5 minutes until the sauce begins to thicken.
  6. Return the chicken to the skillet, spoon sauce over the top, and simmer for another 3–4 minutes.
  7. Stir in the fresh herbs and adjust seasoning as needed.
  8. Serve warm with additional herbs on top.

Notes

  • Use bone-in chicken thighs for a richer flavor.
  • Substitute half-and-half for a lighter sauce.
  • Add spinach or cherry tomatoes for extra veggies.
